Mushroom and Walnut Triangles

Ingredients
- puff pastry
- 2 T olive oil
- 1 leek, finely chopped
- 150g button mushrooms, diced
- 1/3 cup aborio rice
- 1 cup vegetable stock
- ¼ cup walnuts, chopped
- 2 T chives, chopped
- sesame seeds
cranberry flavoured gravy
- 2 T olive oil
- 1 onion, chopped
- 3 cloves garlic, crushed
- 1 T plain flour
- 2 T cranberry sauce or fresh cranberries
- ¼ cup vege stock
Method
- Heat oil and fry leek until soft. Add rice and mushrooms, chopped finely. Add stock and simmer until rice has absorbed and is cooked. Add walnuts, chopped and simmer for 2 minutes. Season and stir through chives.
- Cut a sheet of puff pastry in half diagonally to make a triangle. Place 2 teaspoons of mixture into the centre and fold up to make a small triangle, pressing down the edges. Brush with oil and sprinkle on sesame seeds.
- Bake in a 180 degree oven for 10 minutes or until golden.
- For the gravy, fry the chopped onion and garlic in the oil. Add flour and stir for 1 minute. Add the stock and simmer until thick. Stir through cranberries.
- To serve, stack 2 triangles on top of each other to make a star shape. Create a ring of gravy around the edge and garnish with parsley.
